We cellar wine in a specially build wine room that meet all standards regarding perfect storage conditions.
The temperature all year round is 12,5 degrees Celsius with almost zero in-bottle fluctuations (0.1 to 0.2 delta).
Humidity is kept between 65% and 75%. This in order to prevent premature dry out of the corks that could result in leakage.
The cooling system is monitored by a computerized system that will go in an alert mode as soon at the temperature fluctuates more than 1 degree. Technical failures as well as power outage are monitored. We also have on-site a generator for power back-up.
Those strict conditions are necessary in a country such as Israel where high temperature can ruin definitely the wine in a few days or weeks.
