A drinking window is the suggested period during which the wine is at its very best.
The notation "2011 - 2015" for example, indicates that the wine needs further cellaring before it comes to its peak and will then cellar comfortably through 2015.
"Drink now - 2015" indicates that altough the wine is drinking well now it will continue to cellar nicely until 2015.
A drinking window is given on the conservative side and will depend on the quality of the cellaring.
Too high temperatures will accelerate the aging of the wine and cause undesirable reactions.
